This 5-minute, raspberry and coconut muffin recipe is super quick to make.
Just imagine.
It’s Sunday and you’re just settling in for that second cup of tea and a little quiet cruise around the social media sites and the phone rings. The in-laws are coming for a visit. Do you:
- run from the house screaming
- burst into uncontrollable crying
- make muffins
Make muffins of course because these seriously only take 5 minutes to throw together and you can get back to having you time before the family descends.

Easy and Healthy Raspberry And Coconut Muffin Recipe
Preparation: 5mins Cook time: 20mins Difficulty: Ridiculously easy
Ingredients
- 1 cup raspberries
- 1 cup of almond meal
- 1/2 cup desiccated coconut
- 2 tbsp coconut flour
- 1 tsp vanilla extract or paste
- pinch of salt
- 2 eggs
- 1/2 tsp baking powder
- 1 cup Almond and coconut milk
- 1/4 cup coconut
Method
- Set the oven to 180º C
- Line a 12 hole muffin tray with muffin cases
- Bung all of the dry ingredients in a bowl
- Whisk the eggs with a fork and add to a jug with the rest of the wet ingredients
- Add the wet ingredients to the bowl with the dry
- Mix well
- Divide among the muffin cases
- Bake for approximately 20 mins or until golden and cooked through
Notes
These muffins are not sweetened. If they are for children or you are not ready to go without the sweetness I suggest 2 scoops of concentrated Stevia or a tablespoon of Xylitol added to the dry mixture
