This is the easiest raspberry chia jam. It is so quick you will be enjoying it by the time the toast is done. Remember the days when fruit would be boiled with the sugar until you had setting consistency. Some fruits just took forever and you had much better things to do. Then the jars would sit on the shelf and you were lucky to use it up before that damn peach tree was dropping its fruit yet again!

If you follow my blog you will know I like easy and this recipe is so easy it is almost criminal. I am expecting the jam police to knock on the door any minute now.

Raspberry Chia Jam Recipe

Prep time: 5  Total time: 5 mins  Serves: 1 small jar

Ingredients

  • Frozen raspberries – fill a jar with them, I used a large vegemite jar.
  • 1 Tbsp chia seeds
  • Juice of half a lemon
  • Sweetener of your choice. I used xylitol but you could use coconut sugar, maple syrup or rice malt syrup.

Instructions

  1. Add the raspberries and chia seeds to the jar.
  2. Wait for the raspberries to thaw, and the chia seeds to soak up the juice, stirring from time to time.
  3. Add lemon juice.
  4. Add sweetener to taste.

Easy, nutritious, and raw. What more could you ask for at this time of year when spare time is as rare as an ice cube in the Sahara?
