I first made my own mayonnaise when we started on a low carb diet and I haven't looked back. I had no idea how easy it could be. This is so much healthier and tastier than any shop-bought mayonnaise you will buy.
If you have a stab blender, also known as a stick blender, hand blender or immersion blender, you are absolutely 99% there.
The jars I like to use are empty Vegemite jars. They have a plastic lid which is easy to keep clean and the opening of the 560gm jar just fits the head of our blender perfectly.

Quicker than grabbing a jar off the shelf at the supermarket and taking it through the checkout. Only five ingredients and not one of them is produced in a large chemical factory.
This stuff is so versatile too. We love a huge dollop of it sprinkled with capers or chopped up gherkins underneath crispy-skinned salmon, a regular Saturday night indulgence for us.
I use extra virgin olive oil which does give a very strong flavour but I want all the benefits of that first press of the olive. If you don't like the taste maybe use a light olive oil or try avocado or macadamia oil. You could also go half and half with coconut oil. Experiment and see what you like.

Super Easy Mayonnaise Made In A Jar
- 1 large egg
- 2 tbsp apple cider vinegar or lemon juice
- salt and pepper
- 1 cup of oil
- 1 heaped tsp of dijon or grain mustard (optional)
- Break the egg into a jar
- Add lemon and salt and pepper
- Add dijon mustard if using
- Add oil
- Gently put stick blender into the mixture and blend until the ingredients are all incorporated
- Go sit down and have a break and congratulate yourself on the time you have saved
Note: Use fresh herbs instead of mustard for a tasty green mayo.
How much easier can it get? We get through a lot of this on account of it being delicious and used on hot as well as cold dishes.
